Jose Ramirez, one of 15 siblings, began as a 13-year-old bagboy in Denver's Highlands, later managing servers at Las Palmas while supporting his family. In 2002, with just $5.18 left, he opened the first Los Dos Potrillos in Centennial, promising to buy back any unsatisfactory meal. Through hard work, Jose and his family expanded to six locations—Centennial, Littleton, Highlands Ranch, Parker, Northglenn, and Castle Rock—serving authentic Mexican food with a cozy, family-friendly vibe.
